1/2 melon, peeled, seeded, diced*
1 container of fresh feta, drained and chopped or crumbled
2 sprigs fresh basil, leaves chopped, stems discarded
2 sprigs fresh mint, leaves chopped, stems discarded
2 T. olive oil
1 T. champagne or white balsamic vinegar (more to taste)
Juice from 1/2 a lime
Combine fruit, feta and herbs in a medium bowl. Whisk oil, vinegar, and lime juice in a small bowl, season with salt and pepper. Add dressing to salad and toss to combine.
*Can also serve melon in wedges, add feta and herbs to dressing and pour over the wedges; garnish with a sprig of fresh herbs.
